There's not an entry about me in the new Oxford Companion to Spirits and Cocktails - surely an oversight - but there is one by me.
I was asked to write the entry for "Ice, Science of its Use." I did it in two and a half pages that took me a very long time to write. Much of it is based on the work of Dave Arnold in Liquid Intelligence, with hints by Mariana Gosnell's book Ice, plus naturally I included my own work with clear ice and directional freezing.
Just adding this to the blog for my resume, lest I forget.
