Tipperary Boutique Distillery was founded in March 2016, and before the distillery's own creations were ready for release, the brand put out a few bottles they sourced from elsewhere. Tipperary Watershed is one such bottle, and it's an interesting single malt that's aged in first-fill bourbon casks and cut with local water to a respectable 94 proof.
Watershed is a refreshingly original whiskey that's full of fruit (apricot, peach, apple), vanilla, and pepper. It's still relatively light, in that typical Irish whiskey style, but its composition of flavors will give any whiskey drinker plenty to chew on.

Tipperary Knockmealdowns is named for the Knockmealdown mountain range, which straddles the border between County Tipperary (where this whiskey is made) and Waterford. It's a great name, but it's also a very solid whiskey.
It's created from only six casks, matured in Ireland for 10 years in ex-bourbon barrels, and cut down to 94 proof with local water. The whiskey is unique in flavor and texture, offering earthy notes of clay and tobacco alongside honey, ginger, and pepper.
